Original mission: We started with...To connect people to the calming, refreshing and healing influence of the earth through the aromas and tastes of locally grown herbal teas, flowers and fruits, together with and fresh squeezed lemonade.
Then things evolved. We developed farmhouse onion- rosemary sourdough focaccia. We started to offer amazing gluten-free baked goods and soups, to great enthusiasm. We made quiches with exotic mushrooms. We were invited to make breakfast burritos, egg sandwiches and avocado toast
The mission evolved:
To connect people to the calming, refreshing and healing influence of the earth through the aromas and tastes of authentic food and beverages prepared with locally grown herbs, flowers, vegetables and fruits.
We provide dried and prepared home grown, artisan herbal teas and fresh squeezed lemonade to go with herbal, floral and fruit infusions that will “quench your senses.” We also make gluten-free baked goods and soups that are available through our on-line store and for pick up at the markets.
Joyce explains what using herbs means to her, “To me herbs awaken the senses and make a person feel alive. I planted many of these herbs years ago because I am enchanted by the way they smell. Later, I learned about the healing properties of herbs and flower essences which I find quite amazing. If you research any given herb from fennel to mint, you will find that these plants not only smell and taste great, but that they can play an important role in maintaining your good heal

What seems to be everyone’s perennial favorite? Fresh Squeezed Lemonade. What makes people the most happy? Fresh Squeezed Lemonade with the Pink Hibiscus Option (which comes out of the Magic Teapot together with one FREE wish.
While you can have lemonade “straight up,” we are veritable mixologists of lemonade, blending over 20 herbal tea infusions or floral or fruit simple syrups with fresh squeezed lemonade. Try some of these flavors:

For convenience, you can order and pay online and pick up at a Saturday or Sunday market, or come to the farm on Mondays. Please call 917-288-3936 to order or ask questions.
When they are in season, our lemonade is garnished with happy, peppery nasturtiums. Other popular garnishes include fresh chocolate mint or peppermint, lemon verbena. lemon balm, fresh fennel, bee balm flowers or zinnias in your glass.

In order to sell teas and fresh squeezed lemonade, I needed to get all of the approvals for a mobile restaurant. This means that, when asked, I can prepare Asian Veggie Stir Fry (with Brown Rice and Locally Grown Vegetables seasoned with Garlic, Ginger, Soy Sauce and Sesame Oil.) I can also set up my mobile Ooni wood fired oven and make Plein Air Artisan Sourdough Pizza with Local Vegetables and/or Sausage.

1. Herbal Tea: Herbal tea is proven to help you maintain your health. We offer ten varieties grown on the farm at the top of Macungie Mountain.

Available in 4 oz for $5, 8 oz. for $8 and $16 oz. for $16. Comes in an attractive glass Muth bottle with cork, suitable for gift-giving
